Anthony Bourdain isn’t just any old foodie. He reveals what goes on behind those swinging kitchen doors and tells all in his acclaimed Kitchen Confidential (2000) and A Cook’s Tour (2002). His latest, The Nasty Bits: Collected Varietal Cuts, Usable Trim, Scraps and Bones (2006) is a collection of “utterly riveting” food journalism. Bourdain serves as executive chef at Manhattan’s Brasserie Les Halles.
